All About Cauliflower

This veggie is almost white, and looks as if it might not have much going for it. But that couldn't be further from the truth.  It's a member of the cruciferous family, like broccoli, cabbage and other nutritional stars.  Actually it may be one of the most valuable additions to the diet you could make.  Its a great source of vitamins C, K,  B1, B2, B6, folate, pantothenic acid, choline, manganese, phosphorus, biotin, niacin, magnesium, omega-3 fatty acids, protein, and dietary fiber,

You can boil or steam it; serve it with butter and a dash of vinegar, or just butter, maybe a dash of salt.  There's a lot of other things you could do with it, but Cauliflower Cheese Soup is so delicious it's habit forming.  Even people that think they don't like cauliflower will eat this one up.
