Apple Cake

3 cups /750 mL all-purpose flour
3 cups /750 mL sugar, divided
4 eggs
1 cup /250 mL vegetable oil
cup /125 mL orange juice
3 tsp /15 mL Baking Powder
2 tsp /12 mL Vanilla
1 tsp /5 mL salt
4 large apples, peeled & sliced
2 to 3 tsp /10-15 mL Ground Cinnamon

Preheat oven to 350F /180C. Grease &  flour 10" /25 cm tube pan. Beat flour, 2 C. /500 mL sugar, eggs, oil, orange juice, baking powder, vanilla & salt in lg. bowl for 2 min. Pour half of batter into pan. Toss apples with 1 C./ 250 mL sugar & cinnamon in med. bowl. Arrange 1/2 apple mixture in 1 to 2 layers over batter. Top with remaining batter; arrange remaining apple mixture over batter.

Bake about 1 hr. or until toothpick inserted in center comes out clean. Cool in pan on wire rack. Invert onto serving plate. Slide knife around edge if needed to loosen cake from pan. 12 servings.
