Apple Cranberry Cobbler

Filling:


1/2 C. /375 ml brown sugar
1/4 C. /60 ml Vanilla Dessert Mix
1 Tbsp. /5 ml Vanilla Extract
1 1/2 tsp. /7.5 ml Cinnamon
6 C. /1500 ml peeled, thinly sliced apples
1 3/4 C. /625 ml cranberries
2 Tbsp. /30 ml lemon juice

Combine sugar, vanilla dessert mix, vanilla extract & cinnamon. Add apples, cranberries & lemon juice, stir to coat well. Transfer to lg. saucepan; bring to boil over med. high heat stirring constantly. Reduce heat & simmer for 5 min. or just until apples start to soften. Spoon mixture into 13 x 9 inch/ 33 x 23 cm baking dish.

Drop Biscuits:

1 3/4 C. /425 ml all-purpose flour
3 Tbsp. /45 ml sugar
1 Tbsp/ 15 ml Baking Powder
1/2 tsp. /2 ml baking soda
1 1/4 - 1 1/2 C./ 310- 375 ml heavy cream

Mix together flour, sugar, baking powder, baking soda. Cut in butter; stir in cream. Drop on apple cranberry mixture. Brush with butter & sprinkle with sugar & Cinnamon if desired.  Bake in a 400F /200C oven for 24 to 30 minutes until biscuits are brown & apples are tender.
