Cooking Spray


2 Tbsp/30 mL brown sugar
1/4 tsp/1.2 mL Apple Bake Seasoning
1/8 tsp/0.6 mL Pumpkin Pie Spice


1 cup/250 mL whole-wheat pastry flour
1/2 cup/125 mL all-purpose flour
1 cup/250 mL bran-flakes cereal
1 Tbsp/15 mL Baking Powder
1/2 tsp/2.5 mL baking soda
1-1/2 tsp/7.5 mL Apple Bake Seasoning
1/2 tsp/2.5 mL Ground Cloves
1-1/4 cups/300 mL applesauce
4 egg whites
1/2 cup/80 mL honey
2 Tbsp/30 mL Grapeseed Oil
1 medium Granny Smith apple, peeled and shredded

Preheat oven to 425 F/220 C.  Coat 12 muffin cups with Cooking Spray.   In small bowl or cup, mix together brown sugar, 1/4 tsp Apple Bake Seasoning and Pumpkin Pie Spice.  Set aside.

In large bowl, combine flours, cereal, baking powder, baking soda, 1-1/2 tsp Apple Bake Seasoning and cloves.  In medium bowl, whisk together applesauce, egg whites, honey and grapeseed oil.  Stir in apples.  Pour over flour and spice mixture.   Stir with a rubber spatula until the flour is just moistened; do not over-mix.   Divide the batter among the muffin cups.  Sprinkle each muffin with brown sugar and spice mixture. Bake for 20 minutes.  Makes 12 muffins.
