Balsamic-Glazed Chicken with Pearl Onions
A recipe from the Sneaky Kitchen

2 skinless chicken breasts (with bone), halved
1/2 lb. frozen pearl or small white onions, thawed
1 green or red bell pepper, seeded, cut into 1" pieces
2 cloves garlic, minced
1 Tbls. chopped fresh rosemary OR 1 tsp rosemary
1/3 C. balsamic vinegar
1 Tbsp light brown sugar
2 tsp olive oil
1/2 tsp salt
1/2 tsp freshly ground pepper

Preheat oven to 400F.  In shallow roasting pan, arrange chicken, pearl onions and bell pepper.  sprinkle garlic and rosemary on top.

In small bowl, whisk together balsamic vinegar, sugar, olive oil, salt and pepper.  Pour mixture over chicken and vegetables.   

Bake uncovered 40 minutes or until chicken is cooked through.
