1 small to medium onion, chopped
2 Tbsp. olive oil
3 medium garlic cloves, minced
1/2 tsp. dried basil
1/2 tsp. dried oregano
salt, black pepper and/or cayenne to taste
1/4 tsp. sugar
1 28-oz can quality crushed tomatoes, such as Progresso or Contadina
1 8oz. can of tomato paste
Heat oil over medium heat. Add chopped onions and sauté until soft. Add minced garlic and spices and sauté another minute. Add tomatoes and sugar.
Bring to a boil, then turn down heat and simmer gently for 10 to 15 minutes. Add tomato paste, stir well to blend and simmer for another 3 or 4 minutes. Taste and adjust seasonings if needed
Drain pasta well, and serve with the tomato sauce.
Note: You may sauté some coarsely chopped mushrooms along with the garlic and spices if desired. Button mushrooms are fine, but other types are more flavorful and far more nutritious, according to Dr. Weil.
