|Cajun Style Red Beans with Rice
A recipe from the sneaky kitchen
2 tsp. cooking oil
2 or 3 slices bacon, diced
2 tsp. olive oil
1 med. onion, diced
1 small red or green bell pepper, diced
1 stalk celery, diced
3 or 4 large garlic cloves, minced
1/4 tsp. dried thyme
1/2 tsp. dried oregano
1 Tbsp. paprika
1/4 tsp. or more red pepper flakes
2 15/16 oz. cans red kidney beans, drained & rinsed
2 cups fat-free chicken broth
Heat cooking oil and add bacon. When crisp,
drain and discard oil. Set aside bacon.
Add olive oil to skillet, with onion, pepper, and
celery. Sauté until soft. Add garlic and seasonings; stir
for a moment. Add bacon, beans and broth. Bring to a boil. Turn to
a simmer and cook until beans are creamy and broth is mostly reduced.
Serve over brown rice as a side dish or a main meal.
