Cajun Style Salmon Fillets for 4
A Recipe from Sneaky Kitchen

4 4-oz salmon fillets
2 Tbsp olive oil
2 Tbsp Cajun seasoning
2 cloves garlic, minced
1/4 cup apple cider (or juice)
1/4 cup balsamic vinegar
1 Tbsp chopped parsley or 1-1/2 t. dried parsley
pinch of sugar
Lemon wedges

Place olive oil in heavy skillet over medium-high heat.  When hot, add salmon. Brown about 2 min. on each side.  Remove & keep warm.

Add Cajun seasoning & garlic to pan. Sauté 1 to 2 minutes stirring constantly, until garlic just starts to turn golden. Add apple cider, balsamic vinegar, parsley & sugar. Cook 2 or 3 minutes, stirring & deglazing the pan.  Return salmon to pan on medium heat; cook, turning once, just until it flakes when tested with a fork.  Serve with lemon wedges.
