Spiced Caribbean Chicken & Vegetable Kebabs

2 teaspoons /10 mL Onion Liquid Spice
1 teaspoon /5 mL Garlic Liquid Spice
1 Tablespoon /15 mL Caribbean Spice Rub
1-1/2 teaspoons /7.5 mL Sea Salt
1/8 teaspoon /.6 mL Nutmeg
1/4 teaspoon /1.2 mL Cinnamon
1/2 teaspoon /2.5 mL Black Pepper
1 teaspoon /5 mL Calypso Sauce
3 Tablespoons /45 mL Original Grapeseed Oil
2 Tablespoons /30 mL fresh lime juice
2 lbs. /900 g skinless chicken breasts, cut into 1-" /25 mm pieces
3 red onions, cut into 1" /25 mm pieces
4 yellow bell peppers or summer squash, cut /2" /12 mm thick
3 zucchini, cut into 1/2" /12 mm thick rounds

Mix first 10 ingredients to make marinade. Place chicken in a glass baking dish & pour marinade over chicken. Let chicken marinate, covered & chilled, turning once, at least 1 hour or preferably overnight. Alternate chicken & vegetables on skewers. (Can be prepared 2 hours ahead. Cover & refrigerate.)  Prepare barbecue (medium heat). Spoon remaining marinade over kebabs & grill until chicken is cooked through, about 5 min. per side.  Serve over rice. Serves 8-10.
