Sweet and Sour Cauliflower
A recipe from the Sneaky Kitchen

1 cauliflower
1 tablespoon olive oil
1 medium onion
1/2 sweet red bell pepper
2 medium stalks of celery
1 clove garlic
2 Tbsp fresh parsley, chopped, or 1 Tbsp dried parsley flakes
1 cup chicken broth, divided
1 teaspoon salt or to taste
few red pepper flakes to taste (optional)
black pepper to taste
1 tablespoon soy sauce
1 tablespoon balsamic vinegar 
1 tablespoon sugar
1 tablespoon cornstarch 

Separate cauliflower into florets, then divide into smaller bite-sized pieces of uniform size. Cook by your favorite method until crispy tender; drain well. 

Cut onion in half stem to root, then slice thinly. Cut bell pepper into thin julienne strips. Thinly slice the celery. Heat olive oil over medium heat; add veggies & cook until just starting to brown.  Mince garlic & parsley & add to pan.  Cook a minute longer, stirring.

Add 3/4 C. chicken broth (or water), reserving 1/4 cup.  Add all seasonings. Add cauliflower & bring to a boil.  Reduce heat & simmer until celery is as tender as you like. Mix the cornstarch & 1/4 cup of broth well.  Add to the cauliflower, stirring constantly, until it thickens.
