Healthier Chocolate Pudding
A recipe from the Sneaky Kitchen
1/4 C. unsweetened cocoa powder
1/4 C. cornstarch
1/2 C. sugar, xylitol, or equivalent of other sweetener (See warning!)
1/4 t. lite salt or sea salt
1/2 t. ground cinnamon
1/4 t. ground allspice (optional)
2 C. unsweetened coconut milk
2 t. vanilla extract
Mix dry ingredients together well till no lumps are seen. Add enough coconut milk to make a smooth paste. Slowly add rest of the coconut milk, stirring to mix smoothly. Place over med heat & stir constantly until it comes to a boil. Turn heat down a little & boil for a minute, stirring constantly; a silicone spatula works best. Pour into a non-plastic bowl or ramekins, or cool a bit a store in a covered plastic container. Serve if you wish with whipped topping - I use CocoWhip as it's natural, & sprinkle with shredded coconut, chocolate sprinkles, or chopped nuts.
Important: Chocolate poisons dogs; it makes them very sick & isn't safe for other pets either. Xylitol is safe for humans & doesn't raise blood sugar, but kills most other pets, especially dogs.
