A recipe from the Sneaky Kitchen
1 pound lean ground beef
1/2 cup dry bread or cracker crumbs
1/2 cup grated parmesan cheese
1/2 teaspoon salt
1/2 teaspoon black pepper
2 teaspoons garlic
1 teaspoon onion
1 teaspoon dried
1 TBS. parsley
flakes (or 2 TBS. chopped fresh parsley)
1/2 teaspoon ground bay leaf
2 large eggs
Preheat oven to 375 F. Mix all ingredients very well with fork, actually beating to mix
thoroughly & make a very soft mixture that holds its shape. If
needed, add a few drops of water or pinches of crumbs to thicken or thin as necessary.
Spray a cookie sheet or jelly roll pan well with cooking
spray. Form mixture into meatballs, placing them on the pan without touching.
Make all about the same size. Small ones are better than large as they
cook quickly without drying out or browning too much. They are also easier
& more attractive for
small children to eat.
Bake for 10 to 20 min. depending on size, to lightly brown on the bottom
& dry on the top. Break one open to be sure the
inside is no longer pink (if so, put back in oven for a few minutes). Add to sauce or soup as you wish.
