A recipe from the Sneaky Kitchen
2 teaspoons Sichuan peppercorns
8 star anise, or 4 teaspoons ground anise
half teaspoon ground cloves
1 Tablespoon ground cinnamon
1 Tablespoon ground fennel seeds
In a dry skillet, roast peppercorns by shaking pan over low
to med. heat until aroma of the peppercorns is released, about 3 min.
Grind roasted peppercorns & star anise separately in a blender
or spice mill. Sift. Mix in other spices & grind again until very
fine. Store in an airtight container. Makes about 4 Tbls.
