Flan de Tres Leches
A recipe from the Sneaky Kitchen
Preheat oven to 325 F (unless you plan to use a double boiler).
Use either a large double boiler, or two ovenproof dishes, one for the flan, the other large & deep enough to cover the smaller dish in water almost to the top. Prepare these ahead of time using hot water, checking the size..
Flan:
1 can sweetened condensed milk
1 can evaporated milk
1 cup milk, regular or low fat  (Hint)
8 large eggs
1 tsp. vanilla
pinch of salt
Caramelized Coating:
3/4 cups sugar
3 Tbsp water

Mix water & sugar in heavy skillet; cook over medium heat stirring with metal or wooden spoon until it's medium-deep golden color (NOT brown).  Immediately pour into flan dish or top of double boiler, turning this way & that to coat the bottom & up the sides as much as possible.  Be careful!  This caramel with cause severe burns if it touches your skin.

Beat eggs slightly, beat in condensed milk, then evaporated milk little by little, & finally other ingredients.  Pour into flan pan onto the caramel.  Place pan of hot water in the oven  Set the flan pan into the water.  Bake 1 to 1 3/4 hrs - more if deep, less if shallow, individual custard cups the time will be greatly reduced.) 

(Double boiler method:  Pour in egg-milk mixture, cover & simmer over hot but not boiling water for about an hour or until the pudding center is firm.)

Inserting a clean, dry butter knife into center to check (outside edges cook sooner than the middle).  If it comes out well coated, cook more.  . DON'T OVERCOOK!  It seriously affects both the texture & flavor!
