5 medium onions
3 Tablespoons /45 mL butter
1-1/2 quarts/liters water
3 Tablespoons /45 mL
Beef Soup Base
1 Tablespoon /15 mL
Onion Soup Base
2 teaspoons /10 mL
Chicken Soup Base
1/4 teaspoon /1.2 mL Black
6 slices French bread
1 cup /250 mL shredded Swiss or Gruyere cheese
Peel & thinly slice onions. Heat 3 Tbsp,/45 mL butter in a heavy
3-qt./liter saucepan over low heat; add onions & cook slowly, stirring until golden
brown in color, about 10 min. Gradually blend in water, Soup bases & seasonings. Bring to a boil; cover
& simmer about 15 min. Meanwhile,
toast one side of bread under broiler until golden brown. Butter untoasted side
& sprinkle each slice with 1 Tbsp./15 mL cheese; broil until cheese is melted. To
serve, place hot soup into ovenproof bowls or mugs; float French bread slice on top.
Sprinkle bowls with remaining cheese; broil until cheese is bubbly & brown.
