Frozen Pudding Sandwiches
A recipe by Karen Danielson from the Sneaky Kitchen
1-1/2 cups cold, skim milk
1-1/2 cups creamy or chunky-style reduced-fat peanut butter
1   4-serving size box Jell-O chocolate instant pudding mix 
24 double graham crackers -- broken in half

With electric mixer on lowest speed, gradually add milk to peanut butter, blending until smooth & creamy. Add pudding mix & continue to beat slowly with mixer at lowest speed for 2 min.  Let stand for 5 min.

Spread filling 1/2" thick on 24 cracker halves, then top them with the other 24 halves, making sandwiches. Smooth edges. Place in plastic container with lid & freeze until firm, about 3-4 hrs.
