Glazed Lemon Squares
A recipe from the Sneaky Kitchen
Bottom Layer:
1 C./250 mL flour
1/4 C./60 mL powdered sugar
1/8 tsp./0.6 mL salt
1/8 tsp./0.6 mL Nutmeg
1/2 C./60 mL butter or margarine

Middle Layer:

1/2 C./125 mL granulated sugar
2 Tbsp./30 mL Lemon Dessert Mix
1/2 tsp./2.5 mL Baking Powder
2 eggs, slightly beaten
2 Tbsp./30 mL water

Glaze:

1/2 C./125 mL powdered sugar
1/2 tsp./2.5 mL Lemon Extract
1 Tbsp./15 mL melted butter
1/2 to 1 Tbsp./7.5 to 15 mL water

Combine flour, powdered sugar, salt & nutmeg in mixing bowl. Cut in butter until mixture forms a soft dough. Press into greased 8" x 8"/20 x 20 cm baking pan. Bake at 3255F/ 170C for 15 min. Mix sugar, Lemon Dessert Mix, baking powder, eggs & 2 Tbsp./30 mL water; spread over baked layer. Return to oven & bake about 25 min. Cool. 

For Lemon Glaze, blend remaining ingredients until smooth. Spread glaze over baked layers, cut into squares. Makes about 2-1/2 dozen bars.
