|Golden Glory Cake
A recipe from the Sneaky Kitchen
Preheat oven to 375° F.
C. cake flour
4 tsp. baking powder
1 1/2 tsp. salt
1 cup margarine
2 2/3 C. sugar
1 1/2 C. canned unsweetened pineapple juice
4 egg yolks
1 1/2 tsp. vanilla extract
4 egg whites
1 tsp. pineapple flavoring (optional)
Sift flour. Measure & sift again with baking powder & salt.
Cream margarine with 2 C. sugar & 2 Tbsp. pineapple juice until light
& fluffy. Add unbeaten egg yolks & beat
well. Add extract(s). Mix until smooth. Alternately add flour mixture & rest of
pineapple juice, mixing just until combined.
Beat egg whites until stiff but not dry. Add remaining sugar
& beat until it just disappears. Gently fold in batter just until well mixed.
Bake in three 8 inch layers for 25 to 30 minutes.
