Herb-CrustedLeg of Lamb
A recipe from the Sneaky Kitchen
1 (7-9 lb/3-4 kg) leg of lamb, bone in
2 Tbsp./30 mL Meat Magic
2 tsp./10 mL Garlic & Parsley Grapeseed Oil
1 tsp./5 mL Rosemary, crushed
1 tsp./5 mL Marjoram
1/2 tsp./2.5 mL Thyme
1/2 tsp./2.5 Garlic Peppercorn Blend, cracked or ground
1/2 tsp./2.5 Four Peppercorn Blend, cracked or ground
1/2 tsp./2.5 mL Sea Salt

Preheat oven to 350 F/170 C. Remove all but a thin layer of fat from lamb & rub with Meat Magic. Combine remaining ingredients in a small bowl; rub onto lamb. Place lamb on rack in heavy roasting pan & place in oven. Rotate pan after one hr. Continue roasting until meat thermometer inserted in thickest part of leg reads 145-150 F/62-65 for medium (160/71 for well-done).  Remove & let rest 20 mins.  Slice lamb & sprinkle with freshly-ground Royal Peppercorn Blend & Sea Salt to taste.  Makes 8 to 10 servings.
