Lamb Florentine
A recipe from the Sneaky Kitchen
2 cups cooked lamb, cut bite-sized
2 tablespoons butter/butter sub
1 medium onion, chopped small
2 cloves of garlic, chopped
1 box (10 oz.) frozen chopped spinach
1/2
C, chicken broth or vegetable stock
1 tomato, chopped
1 teaspoon cumin
1 teaspoon rosemary
1/2 teaspoon allspice
1 cup plain yogurt

Thaw frozen spinach; drain any liquid.  In a lg. skillet over med. heat, heat butter & add onion. Sauté for 2 min. & add garlic. Continue cooking till light brown.  Add remaining ingredients except yogurt, stir well, and cook for 12 min.. Add yogurt, reduce the to med.-low, & cook another 5 min. Serves 5.
