|Macaroni & Tuna Salad
A recipe from the Sneaky Kitchen
16 oz package of large elbow macaroni
3/4 cup reduced fat (lite) mayonnaise
1 teaspoon sugar
poppy seeds, OR 1/2 tsp.
3/4 cup finely chopped celery
1 can tuna, drained
2 large firm red delicious apples, unpeeled
1 tablespoon lemon juice
1 1/2 C. seedless grapes OR
1/2 C. raisins, soaked in hot water,
Cook macaroni according to pkg. directions. When done,
cool in several changes of cold water, then drain well.
Mix mayonnaise, sugar, seeds, chopped celery &
tuna. Add drained macaroni, folding until combined. Core apples; cut into 1/2 inch cubes. Immediately
add lemon juice & stir to mix. Cut grapes in half (for Halloween,
leave whole to make eyeballs). Add to macaroni, folding gently. Taste; you may wish to add more mayonnaise.
Note: You may add
a second can of tuna if you wish. Tuna packed in water is much
lower in fat and calories. Tuna packed in vegetable oil, however, when well-drained,
has less cholesterol & is tastier.
Note #2: You
may wish to eliminate raisins or grapes for a more classic version. Some
people prefer to skip the celery seed or poppy seeds, also.
