Mandarin Chicken with Rice
A Tupperware recipe, at the sneaky kitchen
1 C. rice
2 C. water
1 tsp. salt
4 boneless chicken breast cutlets (1 lb.)
Sauce:
2 Tbsp. brown sugar
2 Tbsp. cornstarch
1/2 C. teriyaki sauce
1/2 C. orange juice
2 cloves garlic, minced
11 oz. can Mandarin oranges, drained
1 green onion, sliced

In Stack Cooker 3-Qt. Casserole, combine rice, water & salt. Cover & microwave on high power for 5 min. While rice is cooking, combine sauce ingredients. After 4 min. remove cover & invert cover over rice. Place chicken cutlets & sauce ingredients in cover. Cover with wax paper & microwave at 50% power an additional 15 min. Garnish chicken with slice onions & Mandarin oranges.  Serve with rice.
