Marinated Tofu Cubes
A recipe from the Sneaky Kitchen

1 package regular firm tofu
2 garlic cloves, minced
2 green onions, thinly sliced (optional)
1 tablespoon minced fresh ginger or candied ginger
2 tablespoons balsamic vinegar
1 tablespoon olive oil
2 tablespoons soy sauce
1/2 teaspoon salt or salt substitute (optional)
liquid hot sauce (optional)

Cut tofu into 1/4 to 1/2 inch cubes.  Place in a refrigerator dish having a tight seal.  Add other ingredients.    Seal, and turn container to coat all the cubes.  

Store in refrigerator until ready to use (at least 3 hours).  Once a day shake or turn over to coat the cubes on the top.  Add a few cubes to salads, soups, fried rice, stews, chow mien and similar dishes.  Will keep up to a week.
