This is not an advertisement! Anyone who has to follow a gluten-free diet knows the difficulties and the feeling of being deprived of favorite foods. There's many great recipes out there if I had the time and energy to follow them, but I don't. I've discovered a GREAT substitute for bread; Mission Extra Soft Gluten free tacos, either yellow corn extra thin or white corn. Take a look at the fantastic things I've found to eat lately!
Breakfast tacos - I normally sauté some finely sliced onions in some olive oil, and break a couple of eggs in a bowl. I usually chop some tomatoes, add some chopped cilantro or parsley, or some crumbled frozen kale, a little lite salt, either black pepper or mild pickled diced jalapenos. One can add some chopped sautéed mushrooms if you want, or some crumbled cooked bacon or sausage. Add the sautéed items to the eggs and veggies, beat well, and some olive oil to a non-stick pan and scramble over medium heat until eggs are cooked to your liking. Warm the tacos (a cast iron or non-stick pan works great) and fill each with egg mix. Sometimes when I slip the taco I sprinkle a little shredded cheddar on the hot side - that's great too. A small dollop of sour creams adds even more flavor.
St. Patrick's day; I made some corned beef, and cooked potatoes and cabbage wedges. The next day I got hungry for a corned beef sandwich. I chopped some corned beef with some horseradish in a mini-food processor; then I heated some tacos, spread them with a little mayonnaise and a glop of corned beef, and there were my sandwiches, with some buttered potatoes and cabbage, heated up, on the side.
I saw a recipe for apple pie and got the munchies! Would it work with tacos? I heated a couple, sprinkling the flipped side with a little cinnamon and sugar, plopped on some canned apple pie filling and voila! It was great.
Regular taco with ground beef/tomato sauce, some lettuce, a slice of avocado and a sprinkle of shredded cheese is great; I add a little sour cream to this too.
How about pizza? Heat one side, flip, spray with cooking spray and add a smear of hot pizza sauce; sprinkle with shredded mozzarella and some dried oregano, slide onto a plate and add whatever you prefer - sautéed mushrooms. cooked sausage, sliced pepperoni, pieces of deli ham - the sky's the limit! Mini pizzas!
