large limes (or lemons or grapefuit)
8 Tablespoons of sugar
2 cups low-fat or fat-free milk
20 ice cubes or equivalent amount of crushed ice
3 pitchers, large jars or other tall containers.
Juice limes. Place juice in one container, adding
sugar. Pour back & forth from one container to another until sugar is mostly
Add half the ice. Large solid ice cubes won't work. If you don't have crushed
or cracked ice or the kind with holes in the
middle, you'll have to crack the ice by hand. The best way to do this is with a
heavy serving spoon. Place ice cube in palm of your hand & give it a good
whack with back of the spoon. Ouch!
Pour ice & juice back & forth several times until it's very
cold. Taste; it should be tangy but slightly tart-sweet. Add more sugar if required, pour back & forth some more to
In an empty pitcher, place milk & rest of
cracked ice. Pour back & forth into a third container, until it too is
extremely chilled. Work quickly so the juice doesn't have a chance to warm up.
Quickly combine the milk & lemon, pouring back & forth a few
times to allow it to combine & not curdle. Pour into tall glasses,
discarding any pieces of ice. Serve with straws. Serves 2
