Oatmeal Surprise Cookies
A recipe from the Sneaky Kitchen
Preheat oven to 375F
1 cup raisins
1/3 cup margarine
1 C sugar OR 1/2 C sugar & equivalent of 1/2 C non-nutritive sweetener
3 tablespoons dark brown sugar
2 eggs
1-1/2 teaspoons vanilla
1/4 teaspoon salt
1 to 2 cups chopped walnuts or pecan pieces
1 cup chocolate chips
2 cups all-purpose flour
2 teaspoons baking powder
2/3 cup ground flaxseed
1/4 C. buttermilk, OR 1 Tbsp lemon juice & 3 Tbsp skim milk
2/3 cups unsweetened applesauce
1 tsp baking soda
2-1/2 cups regular oatmeal (rolled oats - not instant)

Cover raisins with very hot water to plump them. Grease cookie sheets with solid shortening. Cream margarine, white & brown sugar. Add eggs one at a time, beating well. Add vanilla, salt & flaxseed. Drain raisins well; add to creamed mix with chopped nuts & chocolate chips. 

Mix baking powder & flour. Put milk in a small bowl; stir in applesauce & soda. Add flour to creamed mixture alternately with liquid.  Add oatmeal, stirring until well mixed and moistened.

Drop by rounded teaspoonfuls onto cookie sheets. For holidays press half a nut or maraschino cherry into top. Bake 12 -15 min. till tops are springy & edges lightly browned. Remove from oven & let sit a min. before removing to a clean towel.  Scrape, wipe & re-grease cookie sheets between batches.

Makes about 60 to 80 small cookies. These are best stored refrigerated in a tightly closed container or zip-lock bag.
