|Orange Salad with Citrus Vinaigrette
A Tupperware recipe, at the Sneaky Kitchen
3 Tablespoons fresh orange juice
2 teaspoons fresh lemon juice
1/4 cup olive oil
salt & pepper to taste
8 large lettuce leaves
4 navel oranges, pared & sliced into 1/2" thick rounds
1 small red onion, cut into 1/4" rounds
container, place orange juice, lemon juice, olive oil & salt & pepper to
taste. Add blender insert & apply seal. Shake until thoroughly
mixed; set aside.
On serving plate, arrange lettuce leaves; top with alternating orange
rounds & onion slices. Just before serving, drizzle vinaigrette over
all. Makes 8 servings.
