Perfect White Rice
A recipe from the Sneaky Kitchen
2 tsp olive oil
2 large garlic cloves, crushed (not minced)
1 tsp salt or salt substitute
1/2 tsp salsa seasoning or 1/4 tsp ea. red pepper flakes & chili powder
1 tsp dried parsley flakes
2 cups white rice  
4 cups plus 2 tablespoons of water or salt-free broth

Measure out the water & reserve.  (If using an electric rice cooker, place water in the cooker now.)

In a Teflon saucepan, heat the oil over high heat until it shimmers. Add rice & stir with a wooden spoon. Add salt, garlic, parsley & seasonings. Continue to stir until perhaps 1/3 of the rice grains are turning a whiter color. Do not let the garlic  brown! Pour rice into rice cooker, or pour the water into the pan all at once.

Instructions if you do not use a rice cooker: bring rice to a hard rolling boil. Cover & turn heat as low as possible. Cook until rice is tender & all liquid is absorbed.
