Potato Latkes
A Tupperware recipe, at the Sneaky Kitchen
1 large baking potato, pared
1 medium onion"
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup all-purpose flour
1 egg, lightly beaten
Canola oil for frying
Smoked salmon strips for garnish, optional
Chive strips for garnish, optional

Using Tupperware® Grate 'N Measure, grate potato & onion & squeeze very dry in paper towel. Place potato in a Thatsa Bowl Jr.  Add salt, pepper, flour & egg.  Mix lightly until flour is incorporated.

In a medium skillet over medium-high heat, heat oil. Using 1/4 C. Tupperware® Measuring Cup, place 1/4 C. potato pancake batter into skillet, 2 pancakes at a time. Cook until pancakes are nicely browned on one side. Turn pancakes over & cook until golden brown. Drain on paper towels.

Garnish, if desired, with salmon & chives. Makes 12 pancakes
