Puree of Pea
A recipe from the sneaky kitchen
1 Tbsp. butter or non-hydrogenated margarine
1 medium onion, chopped
2 cloves garlic
2 Tbsp. sesame seeds
1/4 C. chicken broth
1 lb. pkg. of frozen peas
salt to taste
black pepper or paprika (optional)

Melt butter in heavy skillet over medium heat. Add onions; sauté until soft, stirring occasionally.  While onion cooks, mash & peel garlic cloves. Add garlic & sesame seeds, stirring & sautéing for a few moments; don't let garlic brown.  Add chicken broth.

Rinse peas under warm water, & add to onion-broth mixture. Bring rapidly to a boil, then cover & turn to medium-low until peas are just tender but still bright green. Chicken broth should be almost completely reduced.

Add a little salt & using a blender or food processor, puree until smooth. Taste for salt & correct. Garnish with a sprinkle of black pepper or paprika if desired, and/or a tiny dab of butter.
