|Rice con Queso
A recipe from the Sneaky Kitchen
1/2 C. chopped onion
1/2 C. chopped green pepper
1 C. water
1 can (14 1/2 oz) no-salt-added whole tomatoes, undrained, chopped
1 C. long grain rice, uncooked
4 oz. can chopped green chilies drained
2 Tbsp. minced fresh cilantro
OR 2 tsp. dried cilantro
1/2 C. shredded reduced-fat Monterey Jack cheese
Coat a small nonstick skillet with cooking spray; place over med. heat until hot. Add onion & green pepper; sauté until tender.
Transfer mixture to a lg. saucepan. Add water & tomatoes, stirring well; bring to a boil. Stir in rice & chilies; bring to a boil. Cover, reduce heat & simmer 20 to 30 min. or until rice is tender & liquid is absorbed. Stir in dried cilantro. Transfer rice mixture to a serving bowl & sprinkle with cheese. Serves 12.
