|Salmon & Black Bean Loaf
A recipe from the Sneaky Kitchen
16 oz. can salmon
4 - 5 slices whole wheat bread, made into fine crumbs
2 eggs, slightly beaten
2 Tbsp. dry butter buds
2 Tbsp. fresh lemon juice
2 dashes Tabasco
1/4 cup cilantro, finely chopped
1 can black beans, about half drained
1 Tbsp. garlic, finely chopped
1/2 cup onion, finely chopped
freshly ground black pepper
Preheat oven to 325° F. Put eggs, butter buds, lemon juice
& black beans into food processor & blend well. Add garlic,
onion & cilantro & blend.
Dump salmon, juice, bones & all into a
lg. bowl & flake well. Add bean mix, then bread crumbs, & stir
well. This will be very 'wet'.
Put in well oiled load pan. Bake
60 to 75 min. Let sit 15 min. before cutting to firm up or
it won't come out of the pan easily.
