Salmon Fajitas
A recipe from the Sneaky Kitchen
2 whole wheat flour tortillas
4 oz cream cheese, low-fat or veggie
2 Tbsp. low-fat mayonnaise
1 tsp. Grey Poupon mustard
1 Tbsp. milk
lox slices or bits (smoked salmon)
chopped extra sweet onion
chopped roasted red or yellow bell pepper
capers
oven spray

Mix cream cheese, mayonnaise, mustard & milk; spread evenly on tortillas. On half of each tortilla arrange lox slices or bits, chopped onion, pepper & capers. Fold over & grill in a sprayed pan over med. low heat. Cover to help cream cheese melt. Flip over carefully & continue grilling. Do not let tortillas become brown or they will be too crisp on the outside.
