Salsa Cruda with Pasta
A recipe from the Sneaky Kitchen

8 oz. of your favorite pasta
1 1/4 lb. or 4 cups very ripe tomatoes, finely diced
1 scant tsp. salt
1/4 cup finely chopped onion
1 lg. garlic clove, minced
sun dried tomatoes (optional)
3 Tbsp. olive oil
2 tsp. dried oregano
1/4 cup Italian parsley, or 2 T. dried parsley
2 Tbsp. fresh basil, or 1 T. dried basil
8 oz. of your favorite pasta
black pepper
Parmesan cheese, grated

Combine chopped tomatoes, salt, onion, garlic, olive oil & dried herbs in a glass or plastic bowl.  If adding sun dried tomatoes, chop & stir into mixture.   Set aside until pasta is done.

Add pasta to boiling water & cook as per package directions.  Add a glug of olive oil to the cooking water to help pasta stay separated.  Drain well.

If using fresh herbs, chop fairly fine & add to tomatoes.  Pour tomato mixture over hot pasta & stir to combine.  Sprinkle with grated cheese.
