Salsa Fresca
A recipe from the sneaky kitchen
4 medium very ripe tomatoes
1/2 small red onion, minced
1 to 2 fresh jalapeņo peppers
2 Tbsp. fresh cilantro leaves, chopped or 2 tsp. dried if no fresh
1 Tbsp. lime or lemon juice
1 Tbsp. good olive oil
salt to taste

Wash & stem tomatoes. You may seed them, & even peel if you wish; be aware that the seeds & skins have many nutrients. Chop into small dice. Place in colander over a bowl to drain.

Mince onion finely. Seed & mince jalapeņo; use seeds also if you like it really hot! Finely chop cilantro leaves. Add drained tomatoes; discarding juice.  Add lime juice & oil; salt lightly to taste. Chips & other foods are often salted, so don't over-salt.

Great served with a dish of low-fat sour cream to cool the taste buds if needed.
