Seafood Pilaf
A Tupperware recipe, at the Sneaky Kitchen
2 Tablespoons butter
1 medium onion, chopped
1 green bell pepper, chopped
2 Tablespoons fresh parsley, chopped
1 cup long grain rice
2 cups chicken broth
1 teaspoon ground black pepper
1 dozen cooked clams in shells
1 lb. cooked shrimp or small lobster tails

Place butter, onion, peppers & parley in OvenWorks Oval. Cover & microwave on high 2 to 3 min. until butter is melted & vegetables are tender crisp. Stir in the rice, broth & pepper. Cover & cook on high for 6 min. until broth boils; then cook on med. for 10 min. more until most liquid has been absorbed & rice is tender. Arrange seafood pieces on top of rice & place in a preheated 300F oven for 8 to 10 min. until seafood is piping hot & the rest of the broth has been absorbed. Garnish & serve.
