Spaghetti American Style
A recipe from the Sneaky Kitchen
1 cup chopped onion
1 Tbsp. chopped garlic
2 Tbsp. extra-virgin olive oil
1 lb. ground sirloin
8 oz sliced fresh mushrooms
1-1/2 cups thinly sliced zucchini
1 cup green peppers, peeled & cut in 1" squares
1 -26 oz can or jar chunky spaghetti sauce
12 oz spaghetti
freshly grated parmesan cheese
1/2 cup very dry red wine (optional)

Heat oil in very lg. skillet or non-aluminum Dutch oven. Sauté onion & garlic until onion is transparent. Add mushrooms & cook until they give up their liquid. Add ground beef & cook & stir until no longer red. Add zucchini & green peppers, & cook an additional 5 min. or less to soften. Add spaghetti sauce. For extra flavor add about 1/2 cup of dry red wine. Turn heat low & cook, stirring occasionally, about 15 min. while cooking & draining spaghetti.   Top each serving with freshly grated parmesan.
