Spanish Rice
A Recipe from Sneaky Kitchen
2 Tbsp. olive oil
1 lg. onion, chopped
1 lg. green bell pepper, chopped
1/2 lg. red bell pepper, chopped
1 lg. stalk of celery, chopped
3/4 lb. lean ground beef  
4 garlic cloves
1 hot pepper (optional)
3 ripe plum tomatoes OR 
       1 large ripe salad tomato
1 tsp. sugar
1 tsp. salt
1/2 tsp. black pepper or to taste
2 tsp. oregano   
2 tsp. dried basil
1 Tbsp. dried parsley (optional)
2  8-oz. cans tomato sauce
1/2 C. white wine   
3 to 4 C. cooked white or brown rice
Parmesan cheese

Place olive oil in a Dutch oven or other lg. pan. Heat over med.-high heat. Add onions, green & red pepper, celery & ground meat. Sauté, stirring & breaking up meat until mixture starts to brown.

Meanwhile cut tomatoes into chunks. Process with hot pepper & garlic. When sauté is done, add tomatoes, sugar, salt, pepper & herbs. Reduce heat & simmer for about 10 min. Add tomato sauce, wine & rice. Mix well. Turn heat to lowest setting & cook for another 10 min., stirring often. Taste. If it needs more flavor, try stirring in a little ketchup, another tsp. sugar or add a little garlic powder or salt, tasting as you go. Serve with grated or shredded parmesan cheese.
