Special Omelet
A recipe from the Sneaky Kitchen
1 whole egg and 4 egg whites
1/4 Cup no-fat half and half, or 1% milk
1 tsp. corn starch
salt and pepper to taste
cooking spray

Mix no-fat half & half or milk and cornstarch until blended. Beat egg & egg whites together with fork or whisk until fluffy. Add milk mixture and continue beating until combined.

Spray a lg. non-stick frying pan lightly with cooking spray & heat to medium. Add egg mixture, cover & cook over low heat until set.  Add filling of choice, and fold over.  Serves 2.

Suggestions for fillings to be added:
Sautéed mushrooms, shredded low-fat or veggie cheddar cheese
Fried hash browns and onions
Cooked asparagus and shredded low-fat or veggie Swiss cheese
Shredded low-fat Monterey jack/cheddar cheese mix, top with warmed salsa and a dollop of sour cream
Any other of your favorite fillings or toppings
Check leftovers for any inventive filling
