Yellow Squash Pennies

Yellow or crookneck summer squash
All-purpose flour
Salt
Black pepper and/or other seasonings if desired
Cooking spray

Wash squash, trim stem & blossom ends. Cut into 1/8" slices. Spread single layer on cutting board or plate. Sprinkle lightly with salt or salt substitute to taste. Let set 1 to 5 min. Put flour in a shallow bowl. Add squash "pennies" & stir to coat. Shake off excess & lay on a plate.

Heat a Teflon coated skillet or griddle on med. heat. Spray squash with cooking spray. Put "pennies" on pan close together single layer & spray tops with cooking spray. Cook for a minute, then turn over with tongs or a fork & spray other side with cooking spray. Sauté until browned. Sprinkle with black pepper if desired. Turn again & brown previous side.

Other seasonings that may be used include hot red pepper, paprika, dried dill, marjoram, or experiment with family favorite spices.
