|Watergate Salad - Healthier Version
A Recipe from Sneaky Kitchen
1 small package pistachio instant pudding mix (3
to 3-1/2 oz)
1 20-oz can crushed unsweetened pineapple, well drained (reserve juice)
1 16-oz can lite fruit cocktail, drained
1 cup miniature marshmallows
1 large banana, chopped into 1/2" cubes
1 cup walnut pieces, finely chopped
1 cup reserved pineapple juice
1 8-oz container reduced-fat whipped topping like Cool Whip (2 C.), thawed
and fruit cocktail separately, reserving juice from each. Mix fruit & marshmallows in a large bowl. Chop banana into 1/2 inch cubes & stir into the canned fruit mixture. Chop walnuts fairly fine
& add to the fruit. Place 1 C. reserved pineapple juice in another bowl. If there's less than 1
C. add some fruit cocktail juice. Whisk pudding mix into juice. When thoroughly mixed, add to fruit
& stir gently to mix.
Fold in whipped topping. Refrigerate at least 1 hr. for dessert to set
& flavors meld. Makes about 8 C. or ten 3/4 C.
servings. Stretch for more servings by adding another cup of marshmallows
& 1 or 2 bananas.
