Whipped Peanut Butter
A Recipe from Sneaky Kitchen

In an attempt to make natural peanut butter work & taste better, even if kept in the refrigerator, I came up with this version.   I made this with the 1 lb. jar of Smucker's Natural Creamy which contains only ground peanuts & salt.  This peanut butter can be used in recipes just like any other.

1 pound natural peanut butter or fresh ground peanuts
Stevia or other sweetener
Olive oil 

Place peanut butter in a small deep bowl. With an electric beater on low speed, beat until oil is mixed in. Add olive oil a Tbsp. at a time, increasing the beating speed. I used about 1 1/2 to 3 tsp. Add a small amount of sweetener to taste. Beat some more on very high speed until peanut butter is creamy & light.

Put as much as you can back in the jar, & either eat the rest or place in another small container. Store in refrigerator.
