Wonderful Spinach Soup
A recipe from the Sneaky Kitchen

1 Tbsp butter or margarine (with no trans fats)
1 Tbsp flour
3 cups defatted chicken broth
1 cup cooked, drained spinach
1/2 t. salt
1/4 t. black pepper
pinch of nutmeg
sour cream for garnish, preferable reduced fat

Melt butter or margarine over medium heat in a large, heavy saucepan.  Stir in the flour & cook, stirring, just until mixture barely starts to brown.  Set aside to cool.

Place some of the broth, the spinach & seasonings in a blender or food processor & blend until smooth.   Add to cooled flour & butter mixture little by little, stirring & scraping.  Add balance of broth.   Bring to a boil, stirring constantly.  Lower heat & simmer for ten minutes to blend flavors.

Serve hot, garnished with a dollop of sour cream and if desired, another shake of pepper.
