Several times when we were young, broke, and expecting company for dinner, I fixed a big pot of Potato Soup. This meal never failed to cause raves and compliments. Polenta is an economical staple served as a side dish at many tables, Italian, Hispanic and more. This is an easy and quick recipe, and by far the best I have eaten. Any way to get the family to eat more veggies is always welcome, especially when it's disguised with an intriguing name like Toothpick Soup. Economizing often means serving chicken. Here's a tasty and novel way to serve it: Chicken Pecan Sandwich. Pan de Batata is an enigma; translated loosely to 'Sweet Potato Bread', it's not made with sweet potatoes, nor is it a bread. Its also called Pan de Boniato. However you call it, it's a delicious treat. In 1950, Ruth Derousseau won Junior First Prize in the Pillsbury Bake-Off with this delightful cookie, Cherry Winks. Even people that normally refuse sweet potatoes may enjoy Sweet Potato Whip, and it's easy to fix. Extra flavors are due to some unusual additions! This sinfully simple variation on cranberries is great with poultry or pork, on whole wheat toast with butter, or atop plain yogurt or vanilla ice cream. Cranberry Orange-Marmalade Sauce. I absolutely love the flavor of bread stuffing whenever I roast a turkey. But this stuffing has several drawbacks, and stove-top just doesn't cut it for me. Here's a quick and easy substitute that almost tastes the same: Stuffed Grits! This dessert dish is good for you, a perfect end to a meal, and simple to make. Apple-Pear Crisp A salad can be a whole meal, or at least the main course, and Chicken Arugula Salad is such a dish. It's one of my favorite recipes, almost better than ice cream or chocolate cake! Enjoy Tupperware Manager Sue Skirvin's tasty 1905 Salad, another Ybor City Colombia Restaurant delicacy. This classic recipe is called by different names; the most common is Johnny Marzetti. In truth, it all started at the Marzetti family restaurant in Columbus, Ohio. Rice Soufflé is a tasty side dish, which you can make with leftover cooked rice. Eating more fruits and veggies doesn't have to mean green beans! Here's a fast and elegant dish that costs almost nothing - Baked Bananas. Many years ago I was starting a family on a slim budget. These cookies were an economical snack and sweet that we all enjoyed. Favorite Oatmeal Cookies. This scrumptious cold soup is deceptively simple and fast to make. The secret to success is to use high-quality canned tomatoes. Serendipity Chilled Tomato Soup Here's a great stuffing for poultry or rolled meat dishes, for those that can't eat wheat. It makes a wonderful dressing for a large fish, baked. Rice Dressing. Red cabbage is full of good stuff, including valuable phytonutrients not found in most foods, that offer protection against many diseases. Try Danish Red Cabbage. I first tasted this dish in my early teens in Nebraska, and the cook gave me the recipe for Swedish Fruit Soup. These moist, delicious muffins are doubly corny. They mix up and bake quickly. Serve with margarine or butter, and maybe some honey or marmalade. Corniest Corn Muffins. There are a few foods which are superstars of nutrition. Often they are stronger-tasting ones as well, so we need to find ways of cooking them to make them more attractive to picky eaters. Here's one that's fast and delicious. Hot Kale Salad This great-tasting cornbread has a confetti look when sliced, and can be made as hot as you like - or not! Great with soup or stew on a chill evening. Spicy Confetti Cornbread. Polenta with Vegetables; a tasty way to use up bits and pieces of veggies, and quickly make a great, and economical, side dish. This dish is one of our favorites, and as pretty as a bouquet of flowers: Oriental Green Bean Salad.

Make your own cheese? Sure, in only minutes of preparation time. Yogurt Cheese or Lebanah is a traditional dish that's good for you, tasty, and easy. There's even instructions and a video! This sweet drink, a Brown Cow, also known as a Root Beer Float, takes only a moment to prepare. This broccoli dish is different, with a familiar sweet and sour sauce. Nutritious by itself, the additional ingredients boost the health benefits. Sweet and Sour Broccoli. How would you like a Whipped Topping that tastes good, adds nutrition to the diet, is cheap, and much healthier? It keeps for a week or so in the fridge, and can even be frozen. Puerto Ricans and others make a similar recipe. Try Cajun Style Red Beans with Rice. For a hearty snack or a light luncheon, try Tupperware's Tomato Mozzarella Salad with Crostini. For gluten-free diets, pie is one of the longed-for items. But you don't have to go gluten-free to enjoy this crispy delight. Heavenly Pie Crust can go low-carb too. This recipe for Stovetop Sweet Potatoes is delicious and very high in nutrients. And easy, too. You can use leftovers as a puree, or make into a tasty soup with any leftover broth.

Try Sweet & Sour Refrigerator Pickles to use up those abundant cucumbers in the most delicious way. For a nutritious and tasty side dish, try Sautéed Cabbage & Apples.
