Enjoy Tupperware Manager Sue Skirvin's tasty 1905 Salad.  She writes: "I use a whole head of lettuce and pretty much double everything when I do it!  It is a recipe from a restaurant chain here called The Columbia House Restaurant - they have really good Spanish food there.... I make the salad pretty regularly!!"  Like the famous Black Bean Soup, this is another Ybor City (Tampa) Cuban recipe, named by the original Columbia, founded in 1905 in Tampa's famous cigar-making barrio.  You may also buy the dressing ready-made at the Columbia in Ybor City, or at many Publix supermarkets.

1905 Salad

1/2 head iceberg lettuce
2 ripe tomatoes, cut in eights
2 stalks celery, sliced thin
1/2 C Swiss cheese, cut in julienne strips
1/2 C cooked ham, cut in julienne strips
1/4 C green Spanish olives, pitted
2 tsp. grated Romano cheese. 

Dressing: 
1/8 C white wine vinegar
1/2 C extra-virgin Spanish olive oil
4 cloves garlic, minced
1 tsp Worcestershire sauce
salt and black pepper to taste
1 tsp
dried oregano
2 tsp lemon juice 

Toss together all salad ingredients except Romano Cheese.

Prepare dressing: mix garlic, oregano, Worcestershire sauce in a bowl.  Beat until smooth with a wire whisk.  Add olive oil, gradually beating to form an emulsion.  Stir in vinegar and lemon juice and season with  salt and pepper.

Add dressing to salad and toss well.  Add Romano cheese and toss one more time.  Serves 4.
