Eating more fruits and veggies doesn't have to mean green beans!  Here's a fast and elegant dish that costs almost nothing.  I've made this with rum instead of brandy.
 

Baked Bananas

4 bananas, fully ripe but not soft
2 Tbsp. melted butter or non-hydrogenated margarine
2 Tbsp. brown sugar
2 Tbsp. brandy or liqueur
1/4 tsp. nutmeg
 

Peel bananas and slice in half lengthwise.  Place in a non-stick or well buttered baking dish.  Mix remaining ingredients and pour over bananas.  Broil a minute or two, until sauce bubbles. 

Serve with sour cream on the side.
