This healthy, easy and delicious recipe was published in AvMed's excellent and helpful magazine, AvMed Accent, sent out to members of this health care group.



Balsamic-Glazed Chicken with Pearl Onions

2 skinless chicken breasts (with bone), halved
1/2 lb. frozen pearl or small white onions, thawed
1 green or red bell pepper, seeded, cut into 1" pieces
2 cloves garlic, minced
1 Tbls chopped fresh rosemary OR 1 tsp rosemary
1/3 C. balsamic vinegar
1 Tbsp light brown sugar
2 tsp olive oil
1/2 tsp salt
1/2 tsp freshly ground pepper

Preheat oven to 400░F.  In shallow roasting pan, arrange chicken, pearl onions and bell pepper.  sprinkle garlic and rosemary on top.

In small bowl, whisk together balsamic vinegar, sugar, olive oil, salt and pepper.  Pour mixture over chicken and vegetables.   

Bake uncovered 40 minutes or until chicken is cooked through.
