This simple but rich rich chocolate cake has a lot going for it.  Although it's not low calorie and is high in sugar, it has the healthiest kind of chocolate and no trans-fats.  Regular butter cream icing is really too rich with this cake.  It can be served with a little whipped cream, some White Mountain frosting, a bit of lite whipped topping, a few spoonfuls of vanilla pudding or ice cream, or even applesauce.  It's even fine plain with a cup of coffee or tea, or a glass of milk.

Black Magic Chocolate Cake

1 3/4 cup unbleached flour
2 cups white sugar
3/4 cup
baking cocoa
2 tsp. baking powder
1 tsp.
salt
2 medium eggs
1 cup strong brewed coffee
1 cup buttermilk or soured skim or low-fat milk (Note)
1/2 cup canola or other light vegetable oil
1 tsp.
vanilla extract

Preheat oven to 350° F.  Grease and flour a 9" x 2" pan or casserole dish.

Combine all dry ingredients in a large bowl.  Add the rest of the ingredients and beat 2 to 3 minutes by hand or with an electric mixer.  Batter will be runny.

Pour into prepared pan, and bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.  Remove and cool before cutting or icing.

Note: if you don't have buttermilk on hand, place a tablespoon of lemon juice or apple cider vinegar in a cup measure, and fill with milk.  It will naturally curdle.
