ChefAl's SECRET CAJUN SPICE -
The world's best & easiest! EQUAL AMOUNTS OF:
1 teaspoon Dijon mustard
Poach salmon - 4 cups water and 1 teaspoon salt to boiling over high heat. Add salmon fillet. Reduce heat to low; cover and simmer 8 minutes until salmon flakes easily when tested with fork. Remove salmon from water; drain salmon; cool slightly.
Grate 1 teaspoon of peel and 2 tablespoons juice from lemon.
Stir and mash poached salmon almost to a paste. Add smoked salmon, butter, Dijon mustard, capers,
black pepper, lemon
peel, lemon juice, and 2 tablespoons chopped chives; blend thoroughly.
1 cup salmon, cooked/flaked
Combine all ingredients and mix well.
1 pkg. (10.5 oz) silken tofu
2 Tbs. lemon juice
1 Tbs. pimento/roasted red pepper
1/2 tsp. dried dill
1/4 cup green onions/fine chop
2 tsp. Cajun blend/spice
1 lb salmon/skinned/poached
Put the tofu, lemon juice, pimento, Cajun spice and dill into a blender and blend until smooth. Add the green onions and salmon and blend again until smooth. Serve garnished with fresh parsley, if desired.
