Cajun Salmon Spread # 1
1 teaspoon Dijon mustard
2 1/2 tablespoons chopped fresh chives
1/8 teaspoon
black pepper
1 teaspoon rinsed/drained capers, chop
1/2 cup butter, softened
1 medium lemon
salt to taste
8 ounces skinless salmon fillet
8 ounces smoked salmon, finely chopped
1-2 teaspoons Cajun spice/blend
Poach salmon - 4 cups water and 1 teaspoon
salt to boiling over high heat.
Add salmon fillet. Reduce heat to low; cover and simmer 8 minutes until salmon flakes easily when tested with fork.
Remove salmon from water; drain salmon; cool slightly.
Grate 1 teaspoon of peel and 2 tablespoons juice from lemon.
Stir and mash poached salmon almost to a paste. Add smoked salmon, butter, Dijon mustard, capers,
black pepper, lemon
peel, lemon juice, and 2 tablespoons chopped chives; blend thoroughly.
Cover and refrigerate at least 2 hours. Let stand at room temperature 30 minutes before serving or until soft enough to spread. Sprinkle with remaining
chopped chives.
Cajun Salmon Spread # 2
1 cup salmon, cooked/flaked
1 teaspoon horseradish
1 tablespoon lemon juice
1 tablespoon onion, minced
1/4 teaspoon
salt
1-2 teaspoon Cajun spice/blend
8 oz cream cheese/low fat Neufchatel
1 tsp liquid smoke, optional
Combine all ingredients and mix well.
Cajun Salmon Spread # 3
1 pkg. (10.5 oz) silken tofu
2 Tbs. lemon juice
1 Tbs. pimento/roasted red pepper
1/2 tsp.
dried dill
1/4 cup green onions/fine chop
2 tsp. Cajun blend/spice
1 lb salmon/skinned/poached
Put the tofu, lemon juice, pimento, Cajun spice and
dill into a blender and blend until smooth.
Add the green onions and salmon and blend again until smooth. Serve garnished with fresh parsley, if desired.
Cajun Salmon Spread # 4
8 oz Neufchatel cheese/whipped
3 oz. smoked salmon, chopped
2 Tbs. capers, rinsed/drained/minced
2 Tbs. red onion, minced
1 Tbs. fresh dill, minced
1 Tbs. Cajun spice/blend
1/8 tsp.
freshly ground pepper
Whip together.
