Pistachios are unexpectedly healthy.  They lower blood pressure and are a heart-healthy choice.  And tasty, too.  You don't have to have stained fingers when you snack; put them in a salad.

Pistachio Chicken Salad

2 cups roasted or poached chicken, chopped
2 stalks celery, chopped
4 green onions, chopped fine
1/2 cup shelled pistachios, chopped
2 Tbsp. sweet pickle relish
1/2 cup lite sour cream
1/2 cup reduced-fat mayonnaise or Miracle Whip
black pepper to taste

Free Survey
Combine chicken, veggies and pistachios.  Add pickle relish, sour cream, mayonnaise and black pepper, combining lightly.  Serve on a large lettuce leaf; garnish if you wish with a few grape tomatoes or halved cherry tomatoes.
